Pressing off the Sangiovese.

Our Sangiovese is ready to be pressed! It is now down to around 1 beaume, from 13, where it started just a week ago. The skins are bucketed into the hydraulic press, with juice draining freely, then pressed to extract the rest. The still-fermenting juice/wine goes back into a clean tank, until fermentation is finished.
