This sparkling wine has a slight apple and strawberry character and a slightly yeasty, biscuit dough character and a rich full mouth-feel with a light acid finish.
The grapes are from Pokolbin in the Hunter Valley in roughly equal proportion.
Our sparkling wine is made entirely "in house" by the "Methode Traditionelle" at its most "hands on" methods. All the secondary fermentation (which imparts the fizz) occurs in the bottle. The Sparkling wine is disgorged just prior to sale, maximising time on secondary lees. Crown seals are used to prevent cork related taints and allow upright storage.
