Until 2025 our sparkling wine has been made entirely “in house” by the “Methode Traditionelle” at its most “hands on”. All the secondary fermentation (which imparts the fizz) occurs in the bottle. The sparkling wines are hand disgorged just prior to sale, maximising the time on secondary lees. Crown seals are use to prevent cork related taints and allow upright storage.

In 2025, two Charmat tanks and counter pressure bottling have been installed and all the
processing and bottling will occur onsite.

Our sparkling range has expanded to include “reds” as well as Chardonnay or Pinot Chardonnay but with the changes now in place our range will extend and styles also expand. New grape varieties like “Prosecco” and new styles like “Frizzante” can now be considered. Much to explore...
